What the washed-rind clinic actually fixed

We mentioned in our conference recap that the washed-rind troubleshooting session filled up fastest of any workshop slot in Madison, and enough of you have asked for a recap that we're putting one together here. This isn't a substitute for the hands-on version, but it covers the two problems the clinic spent the most time on.

Slime, smell, and the humidity log

The clinic opened with a distinction a lot of first-time washed-rind makers miss: a slimy rind and a smelly rind aren't the same failure, and they don't get fixed the same way. Slime without much smell usually points to a brine or wash schedule that's too frequent or too weak for the humidity in your space — the surface stays wetter than the B. linens population can dry out between washes, so you get a film instead of a coat. The fix the instructors kept coming back to was boring but effective: extend the interval between washes by a day and see what happens before touching concentration or recipe. Smell without much slime, on the other hand, is closer to a maturity problem than a hygiene one — the culture has established but the paste underneath hasn't caught up, so you're smelling a rind that's ahead of the cheese it's wrapped around. That one resolves with patience more often than with a wash change.

The single most repeated line in the room, from more than one instructor independently, was some version of "your humidity log tells you more than your temperature log." Washed-rind cultures generally want relative humidity in the high 80s to mid 90s, well above what most other cheeses need, and a cave that's technically within spec on temperature but drifting five or six points on humidity week to week will produce inconsistent rinds even with an identical wash routine. If your results vary wheel to wheel more than you'd expect, the humidity log — not the wash schedule — is usually where to look first. A few members mentioned the heat wave sitting over the region during conference week as a live example: an unusually hot stretch outside can push a cave's dehumidifier or cooling system harder than normal, and a log that's been steady for months can drift for a few days without anyone noticing until the rinds start showing it.

Cross-contamination between washed-rind and everything else

The clinic's last block was blunt about a risk a lot of small operations underrate: washed-rind cultures travel. Brushes, gloves, wash solution, even air handling in a shared cave can carry B. linens onto cheeses that were never meant to have it, and once it's established on a bloomy-rind wheel or a fresh cheese, it's very hard to remove. The instructors' advice was procedural rather than expensive — dedicated brushes and gloves for washed-rind work, wash stations physically separated from other lines where the floor plan allows it, and washed-rind cheeses aged on their own rack rather than sharing shelving with anything else. One instructor put it plainly: "the cheapest fix in the whole clinic is a second bucket."
