Two February workshops worth your calendar
· International Cheese Federation
The first two weeks of a new year are when workshop calendars fill up, and this year is no exception. Registration is now open for two federation workshops in February: Workshop: Cedar Packaging in Tandil on February 18, and Workshop: Prairie Food Safety in Lancaster on February 27. Neither is far off, and both tend to close out before the month starts.
We're mentioning both together because they solve different problems for the same shop. One is about what happens to a wheel after it leaves your hands. The other is about what happens in the room before it ever gets there.
What each workshop actually covers
Cedar Packaging runs a full day on wrapping, boxing, and the materials decisions that shape shelf life and presentation — waxed papers, breathable films, cedar and spruce boards for washed-rind and bloomy styles, and the tradeoffs between a package that looks good on a retail shelf and one that actually protects the rind through a longer distribution chain. If you've ever had a beautiful wheel arrive at a shop looking worse than it left your cave, this is the workshop that explains why, and what to change. It's a hands-on day, not a lecture; bring a wheel or two if you can, since the instructors like working with real product rather than demonstration samples.
Prairie Food Safety is built around environmental monitoring and sanitation documentation — the kind of program review that a state inspector or a wholesale buyer's audit team will actually ask to see. It walks through building a monitoring plan appropriate to your facility's size, what a corrective action record needs to contain, and how to keep the whole system current without it eating a day a week. This one pairs naturally with the federation's Food Safety & HACCP Certificate. You don't need the credential to attend the workshop, but members working toward it have told us the workshop is where the material finally clicked.
Why we're flagging both now, in January
Regional dairy trade newsletters this week were already crowded with January business — state agriculture leadership changes, a regulatory webcast, a members' overseas study tour with its own deadline — which is exactly why we like getting workshop registration in front of members early rather than late. A full year of events fills in fast, and the late-winter workshop season is usually the first thing to get crowded out if you wait.
We noticed a similar pattern outside our own membership this week: a UK retailer's new dairy-supply partnership announced training workshops for young producers on lean, effective processing, paired with a push on packaging waste and recycled materials. It's a bigger operation than most of our members run, but the instinct is the same one behind Cedar Packaging and Prairie Food Safety — pair the craft training with the sustainability and compliance training, and put both on the calendar before the season gets busy, not after.
Neither February workshop requires a package deal or conference registration; you can attend one, both, or neither depending on what your shop needs this year. Details and registration are on the events calendar. If you're not sure which one is the better use of a February day for your operation, ask your regional Events Committee contact — they've usually already talked to a few members who've taken each.
