Wholesale cheese has been on a steady climb all summer, and blue is one of the categories riding along with it — it's the kind of premium wheel a case leans on when the base commodity price is firm and shoppers are already trading up. None of that makes the craft any easier at the small-cave level, though, and every year around this time we get a run of calls from members whose blue wheels came out of the cave patchy — dense grey-blue in one spot, bone white two inches away. It's almost never a bad culture. Most of the time it's a piercing that happened on the wrong day, or a cave that wasn't giving the mold enough air to finish the job it started.
Penicillium roqueforti, the mold behind the classic blue veining, needs oxygen to grow past the surface of a wheel. Left alone, it'll colonize the outside and go no further. That's why every blue-cheese make sheet includes a piercing step — dozens of small channels punched through the paste to let air reach the interior, done today with a bank of long needles rather than the single darning needle old-timers describe. Get the timing right and the mold follows those channels evenly, giving you the marbled cross-section buyers expect. Pierce too early, before the culture has established itself, and you invite the wrong organisms into those same channels. Pierce too late, after the rind has firmed up, and the channels don't stay open long enough to matter.
The texture of the paste matters just as much as the timing. Blue cultures need an open, slightly crumbly curd structure to travel through — a tight, dense paste will trap the mold near the piercing channels no matter how well you time the work. That's usually set earlier in the make, in how the curd is cut and handled, long before anyone picks up a piercing needle.
What the course actually walks through
This is exactly the kind of judgment call that's hard to teach from a written procedure, which is why the federation's blue cheese production course spends as much time on troubleshooting patchy wheels as it does on the base make. The course walks a cohort through culture selection, curd handling and salting rates and their effect on mold growth, the piercing window itself, and how humidity and airflow in the aging room either support or undercut everything upstream of it. It also covers the part members ask about most on the phone: what an uneven wheel is actually telling you. A grey ring with a white core usually means the piercing came too early or the channels closed before the mold reached the center. Blue that's crept out to the rind and gone bitter usually means the wheel sat a week or two past its point, which is as much a scheduling problem as a craft one — worth a look at your cave calendar as much as your make sheet.
