What to look for

A mottled gray rind with no bald patches. Orange slime means it turned into a washed rind by accident.

The long-aged crumbling style: pressed hard, cloth-bound, and left until the paste breaks rather than bends.

Wrapped in leaves for the cellar, which is a handling decision that became a flavor one.
