A farmers market stand without samples

A farmstead cheesemaker in the upper Midwest rebuilt her farmers market stand this spring with a sign-up sheet instead of samples, and found the ledger held anyway.

A farmstead cheesemaker who runs a small stand at her regional farmers market told us this spring felt like opening a business twice in fourteen months. Last year she rebuilt her whole model around pre-orders and a folding table at the end of her driveway. This year, with the market itself finally reopening for the season, she had to rebuild it again — this time for a stand where tasting wasn't yet allowed and lines still had to keep their distance.

Her fix was low-tech and, by her own account, "the least elegant thing I've ever run." A clipboard sign-up sheet at the front of the stand let customers reserve a half-pound of the week's wheel before they'd even seen it, with a one-line description standing in for a taste. "People trusted the description more than I expected," she said. "I think a year of buying cheese sight-unseen from a farm stand taught everybody to read a label like it mattered."

That habit — reading before tasting — is one a lot of our members have been leaning on since last spring, and it's worth building into your own stand regardless of what your local rules allow this month. A one-line note that tells a customer what they're getting — rind style, milk source, how long it's been aged — does real work when a sample table isn't an option, and it keeps doing work later, once it is.

What actually changed at the market

Season openings this spring have moved region by region and week by week, with some markets reporting a return closer to their normal footprint and others still running reduced layouts. A coalition tracking market conditions through the spring noted that many operators were reopening with modified vendor spacing rather than the tighter restrictions of a year earlier — a meaningful loosening, but not a full return to how things were before. Vendors who sell across more than one market in a season have told us the biggest headache isn't any single rule, it's how often the rules differ from one town to the next.

The member we spoke with kept two versions of her stand layout saved on her phone — one for "sampling allowed," one for "sampling not allowed" — so she could set up either in the same ten minutes depending on that week's guidance. It's a small thing, but it meant she wasn't relearning her own booth every Saturday.

The ledger held

What she wanted us to pass along, more than the sign-up sheet trick, was that her numbers came back close to her pre-pandemic spring. Not identical — her Saturday foot traffic is still lighter than it was two years ago — but her per-visit average is higher, and she credits the sign-up sheet for some of that. A reserved half-pound is a decided sale before the customer even arrives; there's less browsing, less walking away with nothing in hand.

She also noted a second-order effect she hadn't expected: the sign-up sheet gave her a running list of names and standing orders, which she's since turned into an informal mailing list for restock announcements between market days. It cost her nothing to build and it's now a bigger share of her midweek sales than she planned for.

If you're rebuilding a stand this season, our Membership & Outreach Committee has been collecting notes like these from members across regions and is happy to make a connection if you want to compare setups with someone running a similar circuit. Reach out through the member portal, or bring it up at the next regional check-in call.
